CREAMY HORSERADISH VINAIGRETTE
This is a really easy recipe to make a sauce that can be used on many things. It is especially delicious on roasted vegetables or even as a dip for many yummy dippable things! A good blender will make this much easier to blend smoothly.
1 /4 cu. peeled & grated horseradish
1 block silken tofu
½ cu. olive oil
1/3 cu. miso
2-3 garlic cloves, peeled & crushed
¼ cu. lemon juice
¼ cu. brown rice vinegar
2 tsp Dijon mustard
1 thai chili, peeled & minced
1 Tbsp maple syrup
salt & pepper
- Combine ingredients in a blender, blend until smooth.
- Adjust consistency with water, should be the consistency of tartar sauce
