CHOCOLATE CHIA PUDDING

This is such a quick and easy recipe with only five ingredients and comes together quickly. Using a high powered blender is the best for creating a smooth and creamy texture, but if you’re ok with the texture of chia seeds, whisking together is just fine. Can be eaten immediately, but set it in the fridge for an even firmer texture.

Ingredients:

For 2 servings – (you’ll want to make more, trust me!)

2 Tbsp. cacao powder or cocoa powder

2 Tbsp. maple syrup

1 tsp. vanilla extract

1 cup dairy-free milk (soy or oat, preferred)

1/4 cup chia seeds

Garnish: raspberries, chocolate shavings, coconut cream, nuts and seeds

Method:

  1. Combine ingredients in a blender, blend until smooth.
  2. Allow to set for a few minutes for the chia to thicken, then stir.
  3. Pour into individual serving dishes and allow to set for at least 15 or set in fridge, covered.
